What style pie is a Big Pauly's pizza?


Our pizzas are wood-fired and a combination of artisan Italian, Chicago, and New York styles.  We use the traditional methods of baking with an open flame and hand-stretching every pie to order.  A Big Pauly's pizza will have a light and airy crust with a nice chew.    


Why does my pizza crust have dark spots?


When we bake your pizza, the crust blisters and bubbles when exposed to the high heat held within the dome of our brick oven.  We call this charring.  It is what distinguishes a Big Pauly's pizza from other styles and makes us unique in appearance and flavor.

OPTIONS

Do you have gluten-free options?


Yes, we do offer a 10" gluten-free crust.  This crust is available for specialty and build-your-own pizzas.  Please note that some of our pizza toppings are not gluten-free, but feel free to contact us should you have any questions.  


What are the ingredients in your gluten-free crust?


Water, rice flour, rice starch, potato starch, tapioca starch, sugar, olive oil, yeast, baking powder, xanthan gum, salt.  


Do you have vegan options?


Yes, our pizza crust and pizza sauce are vegan, as well as our 10" gluten-free crust.  Although we do not offer vegan cheese, if you wanted to bring in your own, we would be happy to top your pizza with it.
